Carmelite Water
In 1379, nuns from Abbaye St. Juste made Carmelite water for Charles V of France. Today you can enjoy the same sweetly fragranced water. Items you will need:
1 lemon
4 ounces vodka
3 tablespoons chopped lemon balm leaves
3 tablespoons chopped angelica root
1/2 teaspoon coriander seeds
1 nutmeg
1 3-inch cinnamon stick
1 tablespoon whole cloves

- Sterilize a glass container (run through hot cycle of dishwasher)
- Peel the lemon with a zester
- Pour vodka into the glass container
- Add the lemon balm leaves and angelica root to the vodka
- Grate the nutmeg and add to the vodka mixture
- Add the lemon peel, cinnamon stick and cloves
- Stir the mixture
- Cap tightly and store in a cool, dark place
- Let sit for 3 to 4 weeks, shake the bottle daily
- Strain the Carmelite water through a paper coffee filter or muslin cloth as you decant it into a perfume bottle
- Use within 12 months.
