Carmelite Water

In 1379, nuns from Abbaye St. Juste made Carmelite water for Charles V of France.  Today you can enjoy the same sweetly fragranced water.  Items you will need:
1 lemon
4 ounces vodka
3 tablespoons chopped lemon balm leaves
3 tablespoons chopped angelica root
1/2 teaspoon coriander seeds
1 nutmeg
1 3-inch cinnamon stick
1 tablespoon whole cloves

  1. Sterilize a glass container (run through hot cycle of dishwasher)
  2. Peel the lemon with a zester
  3. Pour vodka into the glass container
  4. Add the lemon balm leaves and angelica root to the vodka
  5. Grate the nutmeg and add to the vodka mixture
  6. Add the lemon peel, cinnamon stick and cloves
  7. Stir the mixture
  8. Cap tightly and store in a cool, dark place
  9. Let sit for 3 to 4 weeks, shake the bottle daily
  10. Strain the Carmelite water through a paper coffee filter or muslin cloth as you decant it into a perfume bottle
  11. Use within 12 months.
