New Ways to Do Things

I enjoy cooking.  But I don't like to waste electricity, so whenever I cook I fill up the oven to capacity and transfer everything to the freezer in meal-sized portions.  I've done this for years.  However, last year I purchased a counter top convection oven and have been discovering the world of cooking "reasonable" quantities.  Over the last two days I've made scallops wrapped in bacon, stuffed pork chops and marinated pork loin...enough for several meals, but not enough to feed an army!  This little convection oven has opened my world to trying items I would never have considered when I was under the "don't cook until I have an oven full mentality."  The smaller portions allow me to try some of the prepared items made at the supermarket, so that I just pop them into the little oven and voilĂ ...they're ready in a snap.  I've also learned to enjoy tea made in my Home Cafe single cup brewer.  The pressurized steam really perks up the flavor of the tea and it's ready in less than a minute.  I find that as I've become a fiftyish diva I've needed to keep my mind open to new ways to do everyday things.  Some discoveries have been great and others just ho-hum, but either way, my world manages to continually evolve.
